Town Kaimuki’s philosophy is best exemplified on their website, where there is an excellent quote by Lanza del Vasto, which reads “Find the shortest, simplest way between the earth, the hands and the mouth.” Town Kaimuki’s daily menu is ever-evolving, and is based on what local, fresh ingredients are available. What is more, Town Kaimuki’s chef and owner Ed Kenney sits on the Board of Directors for MA’O Organic Farms, Kokua Hawaii Foundation & Sustain Hawaii, and takes personal interest in sustainability projects.
